Extra Protein Cheese Quesadillas

Cheese. We love cheese. Kids and pets alike come crowding around when the cheese is brought out. Naturally we use this to our advantage. With a 4- and a 2-yr old we do what it takes to get them to eat something. Anything. Well, anything not deep fried and smothered with chocolate.
Cheese quesadillas are always a favorite. They are quick and easy for me to make, and they are quick and easy for little hands to break apart for the munching. My kids ate these quesadillas like they were starving. They didn’t even notice that I had added protein powder. My husband didn’t think they were too bad, either. He didn’t come begging for more, but ‘not bad’ is pretty good coming from him!
You will need:
2 flour tortillas
1 cup grated cheese
1/2 scoop protein powder (I prefer Collagen Sport)
1 tsp red pepper
1/2 tsp salt
Mix the cheese, protein powder, and spices in a bowl with your hands. Mix it well to make sure everything is blended. The salt and pepper give the quesadilla a little kick while masking any flavor the protein powder might bring. Throw one of the flour tortillas onto a preheated pan and add the cheese mixture. Yes, the whole thing. It may seem like a lot, but it melts down. You want to taste more cheese and less tortilla. When the cheese is mostly melted and the tortilla is getting crispy put the other tortilla on top and flip the whole thing over. The cheese shouldn’t need to melt much more, so just keep it on the stove long enough to crisp the other tortilla up a bit. Let it cool a little bit before cutting. The protein powder browns a little with heat, but it doesn’t affect the taste.

    I love quesadillas and in fact haven’t made them in a while so probably will do so again soon. I’ll be honest, haven’t read all that many posts so just have to ask…why are you adding protein powder to your foods? I think in our house we probably get enough protein with the foods we eat so just curious.
